Evan and I made Street Tacos Thursday night or in Christian terms on Maundy Thursday. Tilapia is a really good choice for tacos. Evan breaded the meat with flour, red pepper and sea salt, then quickly fried it in a hot skillet with enough oil to keep it from sticking. We used corn tortillas, fresh cilantro, cabbage, onion, Mexican four cheese blend, salsa, and fresh squeezed lime. MMmmm. Mmmm. Mmmm. The sides were black re-fried beans and taco rice.
It was not our Last Supper, but it was the last supper that has been oh so good and something we made that was not from a box or bag.
